Gluten-free Blini

Yield: 18 pancakes

2 cup gluten-free AP flour

½ teaspoon baking powder

1 whole egg

2 tablespoons milk

3 ounces (can substitute with oil of preference) butter, melted

1 teaspoon salt

Mix all ingredients together to make the batter.  In a non spick pan over med heat, add ½oz of batter.  Cook for 1 min each side.  Let cool before you serve
